Simple Rules for Great Coffee

Rule #1: Air is the enemy of coffee.

Fresh Beans are Best

Most coffee beans today have an expiration date, but it's a misconception that the coffee expires six months after roasting. The premium time for fresh beans is between 48 hours and two weeks after roasting.

"In the end though, it's up to the individual. Some people may prefer the taste of it after a month; it's like wine, very much a personal preference," Louie says.

However, the older the coffee, the finer it has to be ground to release the oils.
Storage is also important to protect the coffee bean oils, which deteriorate with exposure to air and light.

If you grind/drink your coffee beans within the first 10 days of arrival you can just reseal the Joshua Tree Coffee 1lb standup pouch and store it in a cool dark location.

For extended storage the best place to keep it is in an airtight container in the dairy section of the fridge at a steady 35°F to 40°F.

Sealed unopened coffee beans may be frozen for up to 8 weeks. Once opened do not return to freezer.

What Exactly Does Roasting Do?

The sugars, fats and starches within the bean are emulsified, caramelized and released. This creates the delicate coffee oil. This oil is what gives coffee its distinctive aroma and taste. The origin of the beans makes a big difference. A bean from Ethiopia will taste differently than a bean from India, even if they are both French roast.

In general, lighter roasts are sharper and more acidic than the darker roasts. Darker roasts have a fuller flavor.

Beans that have been over-roasted will take on a burned, smoky or charcoal flavor. Also, there is less caffeine in the darker roasted coffees than in the lighter ones.

"A philosophy professor stood in front of his class and held up a large mayonnaise jar. Without speaking, he proceeded to fill the jar with golf balls. He then asked the students, 'Is the jar full?' They agreed that it was. He then began to pour pebbles into the jar where it settled into the spaces between the golf balls.
"'Is the jar full now?' he asked. Again the students agreed that it was. The professor then commenced to pour sand into the jar, where it filled the remaining spaces between the balls and the pebbles. Once again the class agreed that the jar was truly full.
"The professor then produced two cups of coffee and filled the already full jar to the brim. 'This jar,' he said, 'represents your life. The golf balls are the important things -- your family and friends, your health and your passions. If you lost everything but these, your life would still be full.
"The pebbles are other meaningful things in your life -- your job, your house, your car. The sand is everything else -- the small stuff.
"If you put sand into the jar first," he continued, "there is no room for the pebbles or golf balls. And the same goes for life. If you spend all your time and energy on the small stuff, you will never have time for the things that are really important. Make room for the important things in your life. The rest is just sand."
